I'm an Italian pastry chef.
During my career I've worked in Italy (Peck) and France (La Grande Epicerie de Paris, Christophe Loui Boulangerie).
I'm an expert in laminated dough, brioches, and leavened products.
In 2019 I was selected to represent Australia in Asia Pacific C3 Valrhona Chocolate chef competition, and I won the first price in Honk Kong. I then represented Asia Pacific on a World stage and I came 5th.
